The very first winner of the James Beard Award for Best Chef Northwest, Executive Chef Caprial Pence snagged the coveted honor while dishing up cuisine in Seattle. Then she left our fair city for the bike-riding, beer-swilling pastures of Portland. As much as we love our little sibling to the south, we're so glad that Executive Chef Pence is back - and ready to treat you to creative American Classics, featuring small-plates with seasonal logic ingredients.

Just how serious are we about scotch and whiskey? One hundred and thirty-plus varieties serious. Make trips to Scotland to visit the distilleries serious. Mark Twain serious. (He said: "Too much of anything is bad, but too much good whiskey is barely enough.") If you're just as serious, welcome - there's a lot of tasting to do. But if you're not, that's what beverage director Jamie Buckman and her team love most of all. They'll make a whisk(e)y drinker out of you yet - or at least give you a history and geography lesson that's way more fun than anything you learned in a classroom.
